Tea has always been an enormous part of my upbringing. Tea carafes fill my refrigerator replacing the juice and soda for a much healthier alternative. It revives my morning providing me with energy to begin my day and relaxes my body and mind for a good night's sleep.

There are enormous health benefits in tea, including high anti-oxidant properties. Afternoon tea should therefore, be accompanied with heathly food choices.

Tumeric Rice with Edamame and Arugula
Ingredients: brown rice, tri-color arugula, edamame, tumeric, sea salt, pepper, lemon juice

1. Cook the rice and season the water with tumeric and lemon juice.
2. Once cooked, toss the rice with edamame and chopped arugula.
3. Season with sea salt and pepper. Best served cold.

Quinoa, Kale, Tomato
Ingredients: quinoa, cherry tomatos, kale, tumeric, sea salt, pepper, lemon juice, olive oil

1. Cook the quinoa and season the water with tumeric and lemon juice.
2. Once cooked, toss the quinoa with cherry tomatos cut in half and chopped kale.
3. Season with 1 tbsp of olive oil, sea salt, and pepper. Best served cold.

Mediterranean Chopped Salad
Ingredients: tomatos, cucumber, carrots, bell peppers, chickpeas, red onion, cilantro, mint, parsley, sea salt, pepper, lemon juice, olive oil

1. Chop the vegetables into small pieces.
2. Combine with fresh minced cilantro, mint, and parsley.
3. Season with olive oil, sea salt, pepper, and lemon juice.

Roasted Vegetables with Hemp Seeds
Ingredients: butternut squash, beets, carrots, purple potatos, garlic cloves, hemp seeds, olive oil, cumin, sea salt, pepper

1. Cut up vegetables into 1/2" cubes. Chop up garlic cloves.
2. Mix vegetables and garlic. Drizzle with olive oil and season with cumin, sea salt, and pepper.
3. Spread on a baking sheet lined with parchment paper. 3. Bake at 375 for 40 minutes. Sprinkle with hemp seeds before serving.

Pumpkin Pie Tart
Ingredients: 1 cup walnuts, 1 cup medjool dates, 2 tbsp coconut oil, 1/3 cup coconut butter, 1/3 cup pumpkin puree, 4 tbsp maple syrup, cinnamon, nutmeg

1. In a food processor, process the walnuts and dates into fine crumbs. Add coconut oil, cinnamon and nutmeg until thoroughly combined.
2. Pour date and walnut mixture into mini tart/muffin pans filling halfway. Place in refrigerator to chill.
3. Mix coconut butter, pumpkin puree, maple syrup, cinnamon, and nutmeg until blended.
4. Pour pumpkin filling over base layer. Garnish each top with a single walnut. Store in refrigerator or freezer. Best served cold.

Superfood Dark Chocolate Bar
Ingredients: 3/4 cup coconut oil, 3/4 cup cacao powder, 13 medjool dates, 1/2 cup unsweetened coconut flakes, 1/4 cup chia seeds, sea salt

1. In a food processor, process coconut oil, cacao powder, and dates until a chunky consistency. Add coconut flakes, chia seeds, and sea salt until combined.
2. Pour mixture in 8" x 8" baking dish lined with parchment paper.
3. Store in refrigerator or freezer. Best served cold.

Apple Cookie
Ingredients: 1 apple, nut butter, chocolate chips, unsweetened coconut flakes

1. Slice apple into thin rings and remove core.
2. Spread nut butter over one side of ring.
3. Add toppings of your choice (chocolate chips, coconut flakes).

Two Ingredient Cookie
Ingredients: 2 large ripened bananas, 1 cup oats

1. Mix the two ingredients together.
2. Add in additional toppings if desired (chocolate chips, nuts, blueberries, cinnamon, coconut flakes).
3. Bake at 350 for 15 minutes.
